After eating fried foods sometime we felt itchy throat, and often lead to cough. What causes itchy throat and cough ?
Itchy throat is actually caused by acrolein, a compound formed by the heating temperature that exceeds the smoke point of cooking oil. Good cooking oil has a high smoke point. The higher the smoke point, the better the quality of cooking oil. When cooking oil is used repeatedly, then acrolein is formed faster so the fried foods can cause a cough.
Frying at temperatures above the smoke point will change the unsaturated fatty acids in the cooking oil becomes saturated fatty acids that increase cholesterol in the blood. The smoke that comes out when frying is a sign that the smoke point is exceeded. Beside changing the fatty chain, frying with a very high temperature will also form acrolein that can causes a cough.
Smoke point at which oil has been used for frying will decrease due to hydrolysis of the cooking oil molecules. That’s why oil should not be used repeatedly. A maximum of three times used. After that, the cooking oil should be discarded.
